Sweetness on Sunday {2}

Back with another bit of Sweetness on Sunday. Like I said before, this won't be every Sunday, but definitely today! :P

Today I'm featuring, not cupcakes, but one of my favorite cookies of all time. Not exactly sure where I got this lovely recipe, but I am so glad it fell into my hands one day!

Cranberry Oatmeal Cookies dipped in White Chocolate

Here we go:
Preheat oven to 375 degrees

1 cup unsalted butter, softened
1 cup light brown sugar
1/2 cup sugar
1 egg
1 tbsp vanilla

Beat together butter and sugars. Add egg and vanilla until well mixed it.

2 cups flour
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt

Whisk these together is a small bowl. Add alittle at a time to butter mixture.

1-1/4 cup quick cooking oats
2 cups dried cranberries

Fold these in to cookie dough until blended well and cranberries are evenly distributed.

Drop spoonfuls onto baking sheet and bake for 9-10 minutes. Cool completely on rack before dipping.

Melt one 12 oz package of white chocolate chips in a small microwavable bowl in the microwave on high for 1 minutes, stirring half way through. To this, add one tbsp of vegetable oil (this makes it the right texture for dipping). Dip each cookie (as deep as you please! My mom always requests that I dip them almost all the way in! haha) and let set on wax paper until dry.

EAT!!

  2. I love white chocolate, and I bet it goes great with cranberries.

    I also love how one of your labels for this post is 'yum'. :D
